Hello, everyone and welcome back to Join The ME Project. I guess you could call today a basic October weather kind of day. We’ve got 50-degree weather and I’m bundled up in a throw blanket. I thought today would be an appropriate day to do the Falling For Fall Tag. Or rather, I’m revamping it. Ashleigh was kind enough to tag me, you can read her post here: For The Love of Books, Falling For Fall Tag

The Questions

What is your favorite fall scent?

I have to agree with Ashleigh on this one, anything Cinnamon scented. In my opinion cinnamon, just adds a sense of warmth to whatever it’s being added to. I don’t think Apple is exclusively a fall scent, but I like Apple and Apple Pie scented things.

 Do you prefer apple stuff or pumpkin stuff?

This is where I get kind of particular. I’m not a fan of pumpkin pie, never have been. But I like pumpkin seeds. I can get down with a PSL though. So I lean more towards Apple definitely.

What is the one thing that you look forward to every single fall?

I’m a really big nature lover. I don’t get the chance to get out much, but I love to watch the seasons change. We live in Ohio now but I grew up in West Virgina. It’s still considered a tri-state area and there’s always fairs and festivals this time of year. Fayette County, West Virginia, has Bridge Day every year. It’s a one-day festival with food and extreme sports. But the view is so gorgeous.

How do you like to spend the more chilly/cloudy days in fall? 

It depends on if I have to go somewhere. If I have to go out, then I try to get my errands done as quickly as possible. When I’m out in the cold, I start to get really achy and my Fibromyalgia and Arthritis will flare up. And I feel like I’m moving in slow motion. If I can stay home, you’ll find me bundled up with a hot drink in my hands. And I’m either watching something on Netflix or Amazon Video.

Which do you prefer: Halloween or Thanksgiving?

I actually don’t celebrate holidays. But if I had to pick one, I would choose Thanksgiving. When my grandmother was alive she would go all out with the food and drinks. Our family was important to her and spending time together was just as important.

What is the one way you embrace the fall season?

Switching my summer clothes out for my winter clothes. This week I’m actually working on my bedroom decor. I’m not trying to make it fall related, but a more muted tone for the winter time. What I had before was just too bright for the season.

What photos would you like to take this fall?

 I would love to take some pictures of the leaves before they all completely change and fall off. We’ve got a really pretty garden in the back of our apartment so hopefully, I can get back there and take some photos.

Favorite childhood memory from this season?

The house we moved from had a tree in the front yard. When I was little I would go sit underneath it. In the movies, you always see people gathering up leaves into a pile and jumping or falling into it. I did that one time and almost broke my butt, it’s not as much fun as it looks.

What is your favorite trend (fashion, makeup, etc) so far this season?

Fashion: Red, 70’s Plaid, and Mid-Length Skirts

Makeup: I’m still learning about makeup, to be honest. I like neutral colors and natural makeup but that’s all the time.

Describe what the fall weather really looks like where you live? 

The temperature has been up and down recently. Last week it was in the 70’s but currently, it’s in the 40’s. It’s been sprinkling today, but it hasn’t rained that much. The weather is usually mild, but I’ve heard that we may have a bad winter.

I don’t think there are enough words in the English dictionary for me to explain how much I love Cheddar’s. I always go hungry and leave feeling like I’m going to epically explode but there’s always a smile on my face.

The area I live in is what’s called a tri-state area. So I live in Ohio, who can reach out and poke West Virginia, and West Virginia talks to Kentucky on the weekends. And they all get together once a month for dinner (does that make sense? Okay, moving on). Because the states are so close, we often travel to Kentucky for dinner and shopping. This particular Cheddar’s is located in Ashland, Kentucky.

The Menu

The menu honestly isn’t complex, but that’s why I like it. Most of the people that enter restaurants are seriously hungry so they don’t want to spend a lot of time staring at pages and pages of a menu. I’ve worked food service, so it’s also awkward to have to stare at people staring at pages and pages of a menu while they try to figure out what they want to it. Their menu gets straight to the point and plays no games.

The Food

During this particular visit, we started off with an appetizer. We got the Chips & Homemade Queso without the seasoned ground beef. I liked it a lot so I wonder how it would have been with the beef added. The salsa that came with it wasn’t exactly my favorite but my mother and our friend enjoyed it. The price for this appetizer is $4.99 and I think that is fair for the amount of food you get.

Now, I have to tell on myself a bit. I am a creature of habit and it’s something that I’m trying to knock myself out of. When I go to a restaurant, I tend to order the same thing over and over again. I’m going to do better though, especially now that I have this blog. My mom and I ordered the Grilled Baja Chicken and our friend got a half rack of the House Smoked Baby Back Ribs.

I can’t speak personally for our friend, although she seemed to really enjoy her food. But the Grilled Baja Chicken is one of my favorite dishes. I’m always surprised by how big the portions are, the sheer amount of food simply amazing me. You can tell the food is seasoned well and made fresh. The half rack of the House Smoked Baby Back Ribs (sides included) will run you $11.79.

Since updating this post, Cheddar’s no longer has the Grilled Baja Chicken on the Menu. But I was able to find a similar recipe in Better Homes & Gardens.

Extras & Dessert

If you ever have a chance to go to Cheddar’s, don’t miss an opportunity to get a Honey Butter Croissant. It sounds so simple, and a matter of fact it is. It simply is a croissant with honey butter on it. But your taste buds will thank you, and then, you will thank me. You can get 3 for $2.99 and I suggest you do or you may lose a friend or a finger.

To wrap up this post we have to talk about their desserts. This last visit in August was the first time that I had tried their desserts. My mom and I got the Hot Fudge Cake Sundae (us getting the same thing once again was not intentional) and our friend got the Seasonal Crisp A La Mode. Now mind you, my expectations were not that high. In my mind, I was somewhat visualizing desserts the same size as Applebee’s shooters. So when the waitress sat down this mammoth of a plate, I thought I was going to lose my mind.

I literally starred at the plate for 30 seconds before I asked the waitress, “If a slice of the cake is this big. How big is the actual cake?” She never answered my questioned though, she just kept laughing at me. I actually couldn’t finish it and had to take the rest home. This cake is rich without being sickly sweet and I love it with all my heart.

Hello, and welcome back to Join The ME Project. Today, I will be sharing ten healthy snack options, some savory, some sweet. Does your favorite healthy snack make the list?

List of 10

Pistachios: They are one of my favorite nuts to eat, and a great addition to both savory and sweet meals. The generally accepted portion amount is about 1 cup. You can put some in a sandwich bag and take with you on the go.

Watermelon: If you’ve read, Spoonie Tips for Surviving Winter, you would know that I am partial to watermelon. It’s great for an in-between meal snack and it aids in hydration which is also important.

Broccoli: By itself, it’s fresh and good. But my sister has got me hooked on drizzling the broccoli with a little olive oil, some lemon pepper seasoning, and roasting it for a few minutes. It’s really good.

Healthy Snacks

Cottage Cheese: Cottage Cheese may not be everyone’s cup of tea, but it is a great healthy option to consider. It’s a great source of protein and can be topped with savory or sweet depending on your preference. My favorite combination is mandarin oranges and honey.

Guacamole: Now, guacamole, is my mother’s favorite snack. Usually, we buy a bag of avocados from our local Sam’s Club and we make it fresh and home. Eat it with tortilla chips or veggies.

Bananas: I think bananas are the quiet, unsung hero in our house. They offer so many health benefits, I could probably write a blog post on that alone. We try to keep them in the house, especially now that we’ve cut down on sweets.

Happy Snacks

Apples: Usually, when I have an apple as a snack it’s in combination with something else. I will slice up an apple and pair it with some caramel dip or cheese. Most of the time, it’s apple slices, cheese, and whatever lunch meat we have available.

Easy Tuna Salad: This easy tuna salad is just that, easy. Take a bowl, get your tuna, mayo, and lemon juice. Mix those ingredients together and then add salt and pepper to taste. Put over a bed of lettuce or a slice of tomato.

Yogurt Parfait: The main components of yogurt parfaits are the fruit, yogurt, and granola if you like it. The possibilities truly are endless. Making a parfait should be based on your specific taste or dietary needs.

Smoothies: I am a huge fan of smoothies. The day can go by so quickly before you realize you haven’t had anything to eat. Smoothies don’t take long to make and you can also make them ahead of time. If you have an issue eating all of your fruits and veggies, just cram them in a smoothie.

As soon as I learned my colors, I knew something was different about my family. There were so many colors involved. The various hues and saturation of browns with rich undertones of yellows and reds. I’ve always been a curious person, even at a young age, I constantly wanted to learn and I asked questions.

My mother tells a story that when I was four years old, I walked up to her and said, “I have a black grandma and a white grandma.” She asked me, “Who’s your black grandma and who’s the white one?” I told her, “Daddy’s mom is my black grandma. And your mom is the white one.” She laughed and said, “My mom isn’t white!” And I told her, “Well she ain’t black!”

Now, I have to say I was a pretty precocious child. My siblings were a lot older than me, and I entertained myself by listening to adult conversation. There was such shade variation between my paternal grandmother and my maternal grandmother that I knew that they were different. But it wasn’t until I got older, that I learned and understood what those differences were.

My paternal grandparents were from Montgomery, Alabama. They moved to Pittsburgh, PA when my father was young. My paternal grandfather liked to tell me stories that he was related to the husband of famous civil rights leader from that area, but I never knew if he was telling the truth or not. He had a silver tongue, and he could pull the ladies in his old age even without having any teeth.

My paternal grandmother couldn’t tell me much about her family, but she knew that her grandmother was a slave. Sadly, my parents separated when I was 12 due to domestic violence and my father moved back to Pittsburgh, PA. My paternal grandfather died in 2005. My paternal grandmother is still living, but I don’t know if I will get the chance to see her.

Because of my parents’ separation, I grew closer to my maternal grandparents. Funny enough, my maternal grandfather was also a storyteller. His family was Blackfoot Native American. He was originally from Mount Sterling, KY. They had a horse farm there, but it was gone by the time I came around. The family name could be traced back to Kentucky, it was the slave master’s name that was given to the slaves.

The only mystery that I had was my maternal grandmother. After the conversation that I had with my mother when I was four, I went up to my grandmother and I asked her why she didn’t look like everyone else. And why my mom and my youngest aunt had brown skin, but the rest had light skin (turns out that’s just genetics). But she told me that I was the first person that had ever asked her that question.

And to this day, whenever asked about it, my mom will say, “My mom was my mom. I never thought to ask her about her family.” Well, I had to be the odd one out, because I did. Turns out, my grandmother was half-Chinese. She knew that her father had a small shop downtown at one time, but then he left and went back to China. She never got to meet him.

My grandmother died in 2006, from Colon Cancer. This was just a year after my paternal grandfather had died, but this affected me more because out of all of my grandparents, I was closest to my grandmother. And just a few months later, I started my freshman year of high school so there was a lot going on.

During this time, I was stuck in a ball of emotions and I was looking for something that would connect me with my grandmother. So I started to write. Write down my emotions. Write down my memories and realize that not everything is black and white.

Hello, and welcome back to Join The ME Project. I was feeling a bit nostalgic today so I thought I would share a family recipe. Let me know your thoughts below and I hope you enjoy.

Family History

My grandfather was originally from Mount Sterling, KY. Kentucky Cream Pie was something he grew up having. My mother made it for him a few years ago before he died, making it yesterday, made me think of him too.

Now, because it’s a Kentucky tradition and it’s been passed down through generations, it has many names. Our family knows it by Kentucky Cream Pie. But I’ve also heard it been called a transparent pie, sugar pie, and chess pie. We have a friend in Greenup Kentucky, who has a similar recipe but knows it by Vinegar Pie.

The family recipe that we follow calls for you to split the eggs. Use the egg yolks in the batter and the egg whites for the meringue on top of the pie. But our family recipe is also written inside of a Southern Living, 1983 Annual Recipes book. The recipe was written down by my mother, who will tell you that she’s not the best note taker. As you are probably guessing, I didn’t follow the family recipe. I found a similar recipe at www.thespruce.com. We did not make the crust, we just used store bought. But in the link, they do have a recipe on how to make your own crust.

Ingredients Needed:

  • 4 large eggs
  • 2 cups of sugar
  • 2 tablespoons of flour
  • 1/2 cup of melted butter
  • 1 cup of heavy cream
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla

Whisk the eggs in a mixing bowl, then add the rest of the ingredients. Just as a word of caution, reduce the speed of your mixer when you add the heavy cream.

If you haven’t made a mess of your kitchen, you can proceed to pour the mixture into your pie crust. The recipe that we were following said to use a pie shield, but we didn’t do that.

Temperature: 350 F

The recipe also said that cook time would only be 55 minutes, we didn’t find that to be true. Truly, it ended up being more like an hour and 10 minutes. Let it cool on a rack and then chill before serving.

And here we have it, Kentucky Cream Pie. Those curious about the taste that has never had it, simply put, it’s pecan pie without the pecans. That’s the best way I can describe it. If you don’t like custard or eggs, you may not find this enjoyable. But for me, this was a taste of home.
